Chorizo toasts

Ingredients

Chorizo toasts
  • 1 tablespoon vegetable oil
  • 2 chorizo sausages, sliced
  • 2 teaspoon honey
  • 1/4 cup red wine vinegar
  • 1 clove garlic, crushed
  • 2 slices sourdough, char-grilled
  • mixed salad, to serve

Method

Chorizo toasts
  • 1
    Heat oil in a medium frying pan over low heat. Add chorizo, cook, stirring for 8-10 minutes or until lightly crisp and cooked. Remove pan from heat, immediately add honey, vinegar and garlic, and stir to combine. Season.

    Place char-grilled bread on serving plates, top with chorizo mixture. Serve warm with salad.

Notes

Combine chorizo mixture with whisked eggs. Cook in a hot frying pan until set. These are at their best made just before you serve them. Great served as a light lunch or brunch.
