Ingredients
Cinnamon sugar muffin bites
- 60 gram butter, at room temperature
- 1/3 cup caster sugar
- 1 egg, at room temperature
- 1 cup self-raising flour
- 1/3 cup milk
- 1/2 teaspoon vanilla essence
- 1 teaspoon ground cinnamon
- 1 cup canned peaches, drained, diced
To dip
- 50 gram butter, melted
- 1/4 cup caster sugar
- 1 tablespoon ground cinnamon
Method
Cinnamon sugar muffin bites

1Preheat oven to 200°C (180°C fan-forced). Line a 12-hole (2 tablespoon) mini muffin tray with paper cases.

2Using a wooden spoon, beat butter and sugar in a bowl until combined. Whisk in egg until combined. Add sifted flour.

3Stir in milk, essence, cinnamon and peaches until just combined; don't overmix. Divide mixture among prepared cases. Bake for 10 minutes or until a skewer inserted at centre comes out clean. Stand for 5 minutes. Transfer to a wire rack.

4Dip muffin tops in warm melted butter. Dip in combined sugar and cinnamon. Serve warm or cold.
Notes
To make 6 regular-sized muffins, bake in a 1/3-cup muffin tray for 15-20 minutes. Try using drained, canned diced pears instead of peaches.
