Ingredients

Cinnamon sugar muffin bites
  • 60 gram butter, at room temperature
  • 1/3 cup caster sugar
  • 1 egg, at room temperature
  • 1 cup self-raising flour
  • 1/3 cup milk
  • 1/2 teaspoon vanilla essence
  • 1 teaspoon ground cinnamon
  • 1 cup canned peaches, drained, diced
To dip
  • 50 gram butter, melted
  • 1/4 cup caster sugar
  • 1 tablespoon ground cinnamon

    Preheat oven to 200°C (180°C fan-forced). Line a 12-hole (2 tablespoon) mini muffin tray with paper cases.

    Using a wooden spoon, beat butter and sugar in a bowl until combined. Whisk in egg until combined. Add sifted flour.

    Stir in milk, essence, cinnamon and peaches until just combined; don't overmix. Divide mixture among prepared cases. Bake for 10 minutes or until a skewer inserted at centre comes out clean. Stand for 5 minutes. Transfer to a wire rack.

    Dip muffin tops in warm melted butter. Dip in combined sugar and cinnamon. Serve warm or cold.

Notes

To make 6 regular-sized muffins, bake in a 1/3-cup muffin tray for 15-20 minutes. Try using drained, canned diced pears instead of peaches.
