Citrus-scented couscous

Ingredients

Citrus-scented couscous
  • 1 cup couscous
  • 2 cup boiling water or chicken stock
  • 2 lemons, zest
  • 2 oranges, zest
  • 1 cup flat-leaf parsley, finely chopped
  • 4 spring onions, finely sliced
  • 1/2 cup flaked almonds, toasted
  • 1/2 cup currants
  • 1/2 teaspoon za'atar
  • 1/2 teaspoon cinnamon
  • 1 lemon, juice
  • 2 tablespoon olive oil

Method

    Place the couscous and boiling water in a large bowl, cover. Rest for 10 minutes to absorb.

    Add the remaining ingredients and season. Stir through with a fork. Taste and adjust seasoning if necessary. Serve warm.
