Ingredients
Citrus-scented couscous
- 1 cup couscous
- 2 cup boiling water or chicken stock
- 2 lemons, zest
- 2 oranges, zest
- 1 cup flat-leaf parsley, finely chopped
- 4 spring onions, finely sliced
- 1/2 cup flaked almonds, toasted
- 1/2 cup currants
- 1/2 teaspoon za'atar
- 1/2 teaspoon cinnamon
- 1 lemon, juice
- 2 tablespoon olive oil
Method

1Place the couscous and boiling water in a large bowl, cover. Rest for 10 minutes to absorb.

2Add the remaining ingredients and season. Stir through with a fork. Taste and adjust seasoning if necessary. Serve warm.
