Coconut and date loaf
  • 1 cup chopped dates
  • 1/2 cup boiling water
  • 125 gram butter
  • 1/2 cup caster sugar
  • 1 egg
  • 2/3 cup self-raising flour
  • 1/4 cup coconut

Method

    Grease a 14cm x 21cm loaf pan, line base with paper; grease paper.

    Combine dates with boiling water. Cover and stand 15 minutes.

    Cream butter and sugar in small bowl with electric mixer until light and fluffy. Add egg, beat until combined. Transfer mixture to large bowl, stir in sifted flour, coconut and undrained dates.

    Spread into prepared pan, bake in moderate oven for about 40 minutes. Stand 5 minutes before turning on to wire rack to cool.
