  • 4 eggs
  • 1 cup (220g) caster sugar
  • 2 teaspoon vanilla extract
  • 125 gram butter, melted
  • 2 cup (500ml) milk
  • 1/2 cup (75g) plain flour
  • 1 cup (80g) desiccated coconut
  • 1 teaspoon grated lemon rind
  • flaked coconut, toasted, to serve

Method

    Preheat the oven to 180°C/160°C fan-forced.

    Beat the eggs and sugar in a medium bowl with an electric mixer until pale and fluffy. Add the vanilla, butter and milk; beat until combined. Stir in the flour, coconut and rind.

    Pour the mixture into a greased 6-cup capacity ovenproof dish. Bake for about 35 minutes, or until the top is golden and puffed.

Notes

Not suitable to freeze. Butter suitable to microwave.
