Ingredients
Icing
- 1 cup (160g) sultanas
- 2 tablespoon flaked almonds, toasted
- 1 cup (160g) icing sugar, sifted
- 1 teaspoon butter
- 1 tablespoon strong black coffee
- 1 tablespoon hot water
Coffee and almond slice
- 125 gram butter, at room temperature
- 1/2 cup (110g) caster sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup (150g) self-raising flour, sifted
Method

1Preheat oven to 180°C. Grease and line a 30cm x 20cm pan. Ensure baking paper extends 2cm above rim of pan.

2Using an electric mixer, cream butter, sugar and vanilla extract until pale and creamy. Add egg and beat well. Fold in flour and sultanas.

3Spread mixture into prepared pan. Bake for 25 minutes, until golden. Cool for 5 minutes in pan. Use baking paper to lift out onto a wire rack to cool completely.

4To make the icing, combine coffee and water in a jug. Mix icing sugar and butter in a small bowl; then add coffee mixture a little at a time, stir until mixture is smooth. Spread icing over slice and sprinkle with almonds. Cut into fingers to serve.
