Ingredients
Coffee and date loaf
- 1/2 cup milk
- 75 gram butter
- 1 tablespoon instant coffee powder
- 1/2 cup caster sugar
- 100 gram (5) fresh dates, pitted, coarsely chopped
- 1 egg, lightly whisked
- 1 cup self-raising flour
- softly whipped cream, to serve
Method
Coffee and date loaf

1Preheat oven to 160°C/140°C fan forced. Grease and line base and sides of a 19x9cm (base measurement) loaf pan with baking paper, extending paper at long sides for handles.

2Place milk, butter and coffee in a large saucepan over moderately high heat. Cook and stir for 1 minute or until butter melts and coffee dissolves.

3Remove pan from heat. Add sugar and dates; stir to combine. Whisk in egg until combined. Add sifted flour; stir until just combined.

4Spoon mixture into prepared pan; level top. Bake for 45 minutes or until a skewer inserted at centre comes out clean. Cool in pan for 10 minutes, then turn out to a wire rack to cool completely.

5Serve sliced, with cream.
Notes
Replace dates with 1/2 cup chopped nuts, such as almonds, hazelnuts or walnuts; price will vary.
