Corn and bacon fritters
Try these tasty, easy corn and bacon fritters for a weekend brunch or snack. Make this meal ahead of time, then reheat the fritters and serve with tomato relish and salad.

Corn and bacon fritters
- 300 gram can creamed corn
- 2 rashers rindless bacon, chopped
- 3/4 cup self-raising flour, sifted
- 1/4 cup finely chopped parsley
- 2 green onions, finely sliced
- 1 egg, lightly beaten
- tomato relish, salad, to serve
Method
Corn and bacon fritters

1In a large bowl, combine corn, bacon, flour, parsley, green onions and egg. Season to taste.

2Heat a non-stick frying pan on medium. Brush with olive oil. Place heaped tablespoonfuls of the mixture into pan in 3 batches, and flatten slightly with a spatula.

3Cook for 1-2 minutes, each side, or until fritters are lightly browned and cooked through.

4Transfer cooked fritters to a plate. Cover with foil to keep warm while cooking the remaining fritters. Serve with tomato relish and salad.
