Corn and coriander fritters

Ingredients
Corn and coriander fritters
- 420 gram can creamed corn
- 3/4 cup self-raising flour
- 1/4 cup chopped coriander leaves, plus extra leaves to serve
- 2 green onions, finely sliced
- 1 egg, lightly beaten
- 4 thin slices middle bacon
- 1/2 cup chunky tomato relish
- 60 gram rocket leaves
- crusty bread, to serve
Method
Corn and coriander fritters

1In a bowl, combine corn, flour, coriander, onion and egg. Mix until just combined. Season to taste.

2Heat a non-stick frying pan on medium. Spray with oil. Working in 2 batches, pour 1/4 cups batter into pan, flattening with a spatula. Cook 3-4 minutes each side, until cooked through.

3Transfer fritters to a plate; cover with foil to keep warm.

4In same pan, fry bacon 4-5 minutes each side, until golden and crisp.

5Serve fritters with crispy bacon, tomato relish, extra coriander and rocket leaves. Accompany with crusty bread.
Notes
Try adding some grated zucchini or chopped red capsicum to the mixture.
