Ingredients
Corn fritters with smoked salmon
- 1/4 cup (35g) plain (all-purpose) flour
- 1 tablespoon rice flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon mild or smoked paprika
- 1/4 teaspoon salt
- 1 egg, beaten lightly
- 1/4 cup (60ml) milk
- 1 1/2 cup (240g) corn kernels
- 2 green onions (scallions), sliced finely
- 2 tablespoon fresh coriander (cilantro), finely chopped
- cooking-oil spray
- 1 medium_piece (250g) avocado, sliced thinly
- 100 gram (3 ounces) thinly sliced smoked salmon
Method
Corn fritters with smoked salmon

1筛面粉,烤粉,辣椒粉和盐medium bowl, gradually whisk in combined egg and milk until mixture is smooth. Stir in corn, onion and coriander, season.

2Spray heated large frying pan with cooking oil. In batches, drop 1 tablespoon of batter for each fritter into pan, cook until browned lightly both sides.

3Serve fritters topped with avocado and smoked salmon.
Notes
You will need to cut the kernels from two small cobs of corn for this recipe.
