Couscous and marinated vegetable salad
  • 2/3 cup couscous
  • 2/3 cup boiling water
  • 280 gram jar char-grilled vegetables, drained
  • 1 medium carrot, shredded
  • 1/4 cup torn basil
  • 2 tablespoon lemon juice
  • 2 tablespoon walnuts, toasted

Method

    Place couscous in a medium heatproof bowl; stir in boiling water. Cover with plastic food wrap; set aside for 5 minutes or until liquid is absorbed. Using a fork. fluff and separate grains.

    Add drained char-grilled vegetables, carrot. basil and juice to couscous; toss gently to combine. Serve salad sprinkled with walnuts.

Notes

We used a jar of char-grilled antipasto vegetables comprising capsicum, eggplant and zucchini. Alternatively, buy char-grilled vegies of your choice from the delicatessen. Use a vegetable peeler to shred carrot into thin ribbons, then cut ribbons into long matchsticks.
