Couscous tabbouleh
  • 2 tablespoon couscous
  • 1/2 cup fresh flat-leaf parsley, finely chopped
  • 2 tablespoon boiling water
  • 1 small_piece (130g) tomato, seeded, chopped finely
  • 1/2 small_piece (50g) red onion, chopped finely
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh mint, finely chopped

Method

Couscous tabbouleh

    Combine couscous and the water in small heatproof bowl. Stir, using fork, until the water is absorbed, cool.

    Combine couscous, parsley, tomato, onion, juice and mint in large bowl, mix well.
