Creamy broccoli with pasta
- 1 teaspoon olive oil
- 1 green onion (shallot), finely chopped
- 1 small potato, peeled, chopped
- 2 tablespoon milk
- 2 small broccoli florets
- 1 tablespoon small pasta shapes
Method
Creamy broccoli with pasta

1Heat oil in a small saucepan on medium. Sauté green onion for 2 minutes, until soft. Add potato, milk and 1/4 cup water and bring to boil. Add broccoli and simmer for 5 minutes, covered, until tender.

2Meanwhile, cook pasta in a saucepan of boiling, salted water according to packet directions. Drain. Toss broccoli mixture through pasta and serve warm.
