Currant patty cakes
  • 1 1/2 cup self-raising flour, sifted
  • 2/3 cup caster sugar
  • 125 gram butter, chopped, at room temperature
  • 3 eggs, lightly beaten
  • 1/4 cup milk
  • 1/3 cup currants
  • icing sugar, for dusting

Method

    Preheat oven to moderate, 180°C. Line 2 x 12-hole shallow patty pan trays with paper cases.

    Place flour, sugar, butter, eggs and milk in a large bowl. Using an electric mixer, beat on medium speed 2-3 minutes, until mixture is smooth and pale. Fold currants through mixture.

    Spoon heaped tablespoons of mixture into prepared pans. Bake 12-15 minutes, until golden and firm to touch. Cool in pans.

    Dust with icing sugar before serving.
