Currant patty cakes
- 1 1/2 cup self-raising flour, sifted
- 2/3 cup caster sugar
- 125 gram butter, chopped, at room temperature
- 3 eggs, lightly beaten
- 1/4 cup milk
- 1/3 cup currants
- icing sugar, for dusting
Method

1Preheat oven to moderate, 180°C. Line 2 x 12-hole shallow patty pan trays with paper cases.

2Place flour, sugar, butter, eggs and milk in a large bowl. Using an electric mixer, beat on medium speed 2-3 minutes, until mixture is smooth and pale. Fold currants through mixture.

3Spoon heaped tablespoons of mixture into prepared pans. Bake 12-15 minutes, until golden and firm to touch. Cool in pans.

4Dust with icing sugar before serving.
