Curried sausages and coriander noodles

Ingredients
- 2汤匙蔬菜或花生油
- 6 thick pork sausages
- 1 medium brown onion, thinly sliced
- 1 medium red capsicum, thinly sliced
- 2 tablespoon korma curry paste
- 2 teaspoon cornflour
- 1 1/2 cup chicken stock
- 150 gram broccoli, cut into small florets
- 80 gram snow peas, trimmed
- 400 gram packet japanese udon noodles
- coriander sprigs, to garnish
Method

1Heat half the oil in a large frying pan over moderate heat. Add sausages; cook and turn for 4-5 minutes or until cooked. Remove from pan. Cool slightly; slice thickly.

2Add remaining oil to pan. Cook and stir onion for 2 minutes or until soft. Add capsicum and cook for 2 minutes more. Add curry paste and cook for 1 minute or until fragrant. Blend cornflour into stock until smooth: gradually add to curry paste. Bring to the boil.

3Return sausage to pan with broccoli and snow peas. Add noodles and cook for 2 minutes or until heated. Spoon into serving bowls. Serve topped with coriander.
Notes
Use green beans instead of snow peas. You can use rice noodles instead of udon; cooking times may vary.
