Dairy-free apple muffins
- 1 egg, lightly beaten
- 1 cup (250ml) soy milk
- 1/2 cup (125ml) vegetable oil
- 1 1/2 cup (225g) self-raising flour
- 1/2 cup (75g) plain flour
- 1 teaspoon bicarbonate of soda
- 1 1/2 teaspoon ground cinnamon
- 1 granny smith apple, cored, finely chopped, plus 1 extra apple, thinly sliced
- 3/4 cup (130g) firmly packed brown sugar
- 3 teaspoon caster sugar
Method
Dairy-free apple muffins

1Preheat oven to moderate, 180°C (160°C fan-forced). Lightly grease a 12-hole (1/3-cup) muffin pan or line it with paper patty cases.

2In a bowl, combine egg, soy milk and oil.

3In a separate bowl, sift flours, bicarbonate of soda and 1 teaspoon cinnamon. Stir in chopped apple, brown sugar and egg mixture until just combined (do not overmix).

4Spoon mixture into prepared pan; top with sliced apple. Bake 20 minutes, or until lightly browned and springy to touch.

5Combine caster sugar and remaining cinnamon in a bowl.

6Sprinkle hot muffins with cinnamon sugar. Stand in pan 5 minutes, then transfer to a wire rack to cool completely.

7Serve muffins warm or at room temperature.
