Date and chocolate torte
A torte is traditionally a layered cake with buttercream type frosting. Of course they can always be adapted to the size, flavours and styles you prefer.

Ingredients
Date and chocolate torte
- 3 egg whites
- 1/2 cup (110g) caster sugar
- 1 cup (140g) slivered almonds, chopped finely
- 3/4 cup (115g) finely chopped dates
- 125 gram dark eating chocolate, grated
- 1 1/4 cup (310ml) thickened cream
- 50 gram piece dark eating chocolate, extra
Method

1Preheat oven to 160°C/325°F. Grease 23cm springform pan; line base with baking paper.

2Beat egg whites in small bowl with electric mixer until soft peaks form, gradually add sugar; beat until dissolved between additions. Fold in almonds, dates and grated chocolate. Spread mixture into pan.

3Bake cake about 40 minutes or until firm; cool in pan. Remove pan ring and baking paper; turn, top-side up, onto serving plate.

4打奶油与电动搅拌机,直到小碗soft peaks form. Cover top of cake with whipped cream. Using vegetable peeler, make curls from extra chocolate; sprinkle top of cake with curls. Refrigerate several hours before serving.
Notes
It is fine to use just 1 x 300ml carton of cream for this recipe. Torte is best served on the day it is made.
