Ingredients
Date and walnut loaves
- 1 cup pitted dates, chopped
- 1 cup brown sugar, firmly packed
- 1 cup water
- 60 gram chopped butter
- 2 cup sifted self-raising flour
- 1/2 teaspoon bicarbonate of soda
- 1/2 cup walnuts, chopped
- 1 lightly beaten egg
- butter, honey, to serve
Method
Date and walnut loaves

1Preheat oven to moderate, 180°C. Lightly grease two 8cm x 22cm bar pans.

2In a small saucepan, combine dates, sugar, water and butter. Stir over low heat 1-2 minutes without boiling, until sugar is dissolved. Bring to boil. Remove from heat. Cool 10 minutes.

3Sift flour and soda together. Stir into date mixture with nuts and egg. Divide mixture evenly between pans.

4Cover tightly with 2 layers foil. Bake 25-30 minutes. Cool 10 minutes. Invert onto a Wire rack to cool completely. Serve loaves sliced with butter and honey.
Notes
Wrap cooled loaves in a layer each of plastic wrap and foil, and store in an airtight container for up to one week.
