  • 1 1/4 cup (185g) white self-raising flour
  • 1 cup (160g) wholemeal self-raising flour
  • 1 cup (220g) caster sugar
  • 100 gram butter, melted
  • 1 cup (280g) yoghurt
  • 2 eggs
  • 1 teaspoon finely grated orange rind
  • 1 1/2 cup (210g) coarsely chopped seeded dried dates
  • 1/2 cup (110g) caster sugar
  • 1/4 cup (60ml) water
  • 2 teaspoon finely grated orange rind
  • 1/4 cup (60ml) orange juice

    Preheat oven to 200°C/180°C fan-forced. Grease 12-hole (⅓-cup/ 80ml) muffin pan with butter.

    Sift flours and sugar into large bowl. Stir in combined butter, yoghurt, eggs and rind. Do not overmix; mixture should be lumpy. Stir in dates.

    Spoon mixture into pan holes; bake about 20 minutes.

    Meanwhile, make orange syrup. Stir ingredients in small saucepan over heat until sugar dissolves. Bring to the boil. Reduce heat; simmer, uncovered, 2 minutes.

    Stand muffins in pan 2 minutes; turn, top-side up, onto wire rack. Stand rack over tray. Pierce muffins all over with skewer; pour hot syrup over hot muffins.
