Ingredients

Dried apricot jam
  • 3 1/3 cup (500g) dried apricots, chopped coarsely
  • 1.25 litre (5 cups) water
  • 1 kilogram (4½ cups) sugar
  • 1/4 cup (60ml) fresh lemon juice

    Combine apricots and the water in large bowl, cover, stand overnight. Transfer apricot mixture with sugar and juice to large saucepan, stir over heat, without boiling, until sugar dissolves. Boil, uncovered, stirring occasionally, about 25 minutes or until jam jells when tested. Pour hot jam into hot sterilised jars, seal while hot.
