Honey peaches with almond ice-cream
  • 8 large scoops vanilla ice-cream
  • 70 gram (1/2 cup) slivered almonds, toasted
  • 90 gram (1/4 cup) honey
  • 1 teaspoon vanilla essence
  • 4 peaches, halved and deseeded

Method

    Place ice-cream in a large bowl and chill for 15 minutes, until softened. Add almonds and stir until well combined. Freeze until required.

    Place honey in a large heatproof bowl and microwave on high (1200 watts/100%) for 30 seconds, until runny. Immediately stir through vanilla essence. Add peaches and toss to coat.

    Heat a non-stick chargrill pan or large frying pan on high and cook peaches for 1-2 minutes each side, until warmed through and starting to brown. Serve warm with almond ice-cream.
