Ingredients
Fig and walnut friand slice
- 1 1/4 cup (125g) roasted walnuts
- 6 egg whites
- 185 gram unsalted butter, melted
- 1 1/2 cup (240g) icing sugar, plus extra for dusting
- 1/2 cup (75g) plain flour
- 2 teaspoon finely grated orange rind
- 1 tablespoon orange juice
- 4 (85g) dried figs, thinly sliced
Method
Fig and walnut friand slice

1Preheat oven to 200°C. Grease a 20cm x 30cm rectangular pan and line base and sides with baking paper, extending the paper 5cm over sides.

2Process nuts until finely ground.

3Whisk egg whites in a medium bowl with a fork until frothy. Stir in butter, sifted icing sugar and flour, rind, juice and ground nuts. Spread mixture in pan and top with slices of fig.

4Bake slice about 25 minutes or until golden. Cool in pan. Dust with sifted extra icing sugar before cutting to serve.
