Flash-fried beef and vermicelli salad
You can have this delicious dinner on the table in under 15 minutes! Slices of steak, julienned vegetables, noodles and loads of fresh herbs make for one satisfying supper

Ingredients
Flash-fried beef and vermicelli salad
- 250 gram rice vermicelli noodles
- 1 lebanese cucumber, halved, sliced diagonally
- 1 large carrot, julienned
- 1/2 cup mint leaves, plus extra, to garnish
- 1/3 cup coriander leaves, plus extra, to garnish
- 500 gram thick rump steak, thinly sliced
- 1 tablespoon chopped toasted peanuts
Lime dressing
- 1/4 cup (60ml) lime juice
- 2 tablespoon brown sugar
- 1 tablespoon fish sauce
- 1 red chilli, seeded, finely chopped
Method
Flash-fried beef and vermicelli salad

1Place noodles in a large bowl; pour over enough boiling water to cover. Stand 5 minutes; drain, rinse and set aside (noodles should be tender but firm). Repeat with fresh boiling water if necessary.

2Meanwhile, to make lime dressing, combine dressing ingredients.

3Toss dressing with noodles, cucumber, carrot and herbs.

4Heat a large wok or frying pan on high. Stir-fry beef 2-3 mins, until browned. Pile beef over vermicelli salad. Garnish with extra herbs and peanuts; serve.
