Frozen coconut bananas with passionfruit dip
If you're looking for a sweet treat that will appeal to young and old and isn't too full of sugar, these frozen coconut bananas with passionfruit dip are for you!

Frozen coconut bananas with passionfruit dip
- 3 medium bananas
- 1/4 cup apricot jam
- 1/3 cup toasted shredded coconut
- 1/2 cup creamy plain yoghurt
- 1 1/2 teaspoon honey
- 1 tablespoon passionfruit pulp
Method
Frozen coconut bananas with passionfruit dip

1Peel the bananas and cut each one in half crossways. Insert a paddle pop/wooden craft stick into each banana piece. Heat jam until warm then push through a sieve to remove any lumps. Brush each banana piece liberally with jam then roll in coconut to coat evenly.

2Place banana pieces on baking paper lined tray, cover loosely with plastic wrap and place in freezer for several hours or until frozen.

3Meanwhile make dip by combining yoghurt, honey and passionfruit in small bowl, cover and refrigerate until required. Serve frozen bananas with passionfruit dip.
Notes
Wooden paddle pop sticks are available from newsagents. Bananas will keep, covered, in the freezer for up to 1 week.
