Ingredients
Frozen lime custard
- 300 millilitre thickened cream
- 2 tablespoon icing sugar
- 500 gram carton vanilla custard
- 2 teaspoon lime zest, grated
- 2 tablespoon lime juice
- store-bought almond bread, to serve
Method
Frozen lime custard

1Using an electric mixer, beat cream and sugar in a medium bowl until soft peaks form. Fold in custard, zest and juice.

2Pour custard mixture into a 21 x 14cm (base measurement) loaf pan. Cover with plastic food wrap, then foil. Freeze for 3 hours or until partially frozen.

3Working quickly, spoon custard into a food processor bowl. Process until smooth. Pour back into pan. Cover; freeze overnight or until firm.

4Serve scoops of frozen custard with almond bread.
