Ingredients

Frozen lime custard
  • 300 millilitre thickened cream
  • 2 tablespoon icing sugar
  • 500 gram carton vanilla custard
  • 2 teaspoon lime zest, grated
  • 2 tablespoon lime juice
  • store-bought almond bread, to serve

Method

    Using an electric mixer, beat cream and sugar in a medium bowl until soft peaks form. Fold in custard, zest and juice.

    Pour custard mixture into a 21 x 14cm (base measurement) loaf pan. Cover with plastic food wrap, then foil. Freeze for 3 hours or until partially frozen.

    Working quickly, spoon custard into a food processor bowl. Process until smooth. Pour back into pan. Cover; freeze overnight or until firm.

    Serve scoops of frozen custard with almond bread.
