Fruity date and chocolate log
Fresh fruit and a drizzle of honey are a sweet addition.

Ingredients
Fruity date and chocolate log
- 1 cup diced dates
- 1/2 cup dried apricots
- 1/4 cup boiling water
- 4 piece crystalised ginger
- 1/2 cup ground almonds
- 3/4 cup desiccated coconut
- 1 teaspoon orange zest
- 150 gram milk or dark chocolate melts
- 1/4 cup chopped nuts, such as pistachios, pecans etc
Method
Fruity date and chocolate log

1Place the dates and apricots in a bowl. Pour over the boiling water. Set aside for 20 minutes to soften.

2In the food processor, combine dates, apricots and ginger, pulsing until finely chopped. Add the almonds, coconut and orange zest. Blend until well mixed and stiff.

3Turn out onto cling film. Roll and shape into a log. Chill for at least 4 hours.

4Melt chocolate and spoon over chilled log. Sprinkle with nuts to serve.
Notes
A cheeseboard is the perfect way to end a sumptuous dinner. Try to serve a few different varieties – a soft cheese such as brie, something tangy and firm such as cheddar, and a nice blue. Always provide plenty of fresh crackers and enjoy adding a few treats, such as a drizzle of honey, seasonal fruits, nuts, or try making this delicious log.
