Fruity orange refrigerator biscuits
Add dried fruit and a little citrus to your sweet biscuits to balance out the butter and sugar and create a new level of flavour your family and friends will love.

Fruity orange refrigerator biscuits
- 300 gram plain flour
- 1 teaspoon baking powder
- 150 gram butter, softened
- 150 gram caster sugar
- finely grated zest of 1 orange
- 1 medium free-range egg, lightly beaten
- 1/2 cup currants
- caster sugar, for sprinkling
Method
Fruity orange refrigerator biscuits

1Sift flour, baking powder and a pinch of salt together onto a piece of paper.

2Beat butter with an electric beater until soft and loose, then beat in sugar and continue beating until light and creamy.

3Add the orange zest, then gradually beat in egg. Add currants, then mix in dry ingredients a third at a time, using your hands to work the mixture into a dough.

4Turn dough onto a clean, lightly floured bench and roll into a sausage about 40cm long. Cut the roll in half, then wrap each piece in plastic food wrap and chill for 2 hours, or longer.

5Preheat oven to 180°C. Line 2 baking sheets with baking paper. Cut dough into thin rounds and place on lined trays. Sprinkle lightly with sugar and bake for 10-12 minutes until golden.

6Cool on a wire rack then store in an airtight container.
