Ingredients
Garlic lamb chump chops with roasted capsicum
- 2 tablespoon olive oil
- 3 clove garlic, crushed
- 4 lamb chump chops, trimmed
- 285克罐子烤红辣椒,精疲力尽的感觉
- 1/2 cup (140g) tomato purée
- 1/2 cup (80g) black olives
- 1 teaspoon brown sugar
- finely grated rind and juice of 1 lemon
- 1/4 cup torn mint leaves
- couscous with flaked toasted almonds, to serve
Method
Garlic lamb chump chops with roasted capsicum

1Heat oil in a large frying pan on high. Sauté garlic, 30 seconds.

2Add chops and pan-fry, 2-3 minutes each side, or until cooked to your liking.

3Stir in capsicum, tomato purée, olives and brown sugar, season to taste. Simmer, 2 minutes.

4Stir in lemon rind, juice and mint leaves. Serve with prepared couscous tossed with almonds, if you like.
