Garlic spinach and bacon penne
This tasty bacon and spinach pasta dish is quick and simple, yet packed full of beautiful flavours that will delight your family and create a fabulous mid-week meal.

Ingredients
Garlic spinach and bacon penne
- 400 gram penne
- 2 tablespoon oil
- 5 rashers rindless bacon, chopped
- 4 clove garlic, sliced
- 2 birdseye chillies, finely chopped
- 1 lemon, grated rind and juice
- 100 gram baby spinach, to serve
- grated parmesan, to serve
Method
Garlic spinach and bacon penne

1Cook penne in a large saucepan of boiling water according to packet directions. Drain, reserving 1/2 cup of cooking liquid.

2Heat half of the oil in a frying pan on medium. Cook bacon 3 minutes, until golden. Add garlic and chilli. Cook 1 minute, until fragrant. Add lemon rind and juice. Simmer 1 minute.

3Toss through penne with reserved cooking liquid, remaining oil and spinach, until spinach just wilts. Season to taste. Top with parmesan, to serve.
