Ingredients

姜南瓜三角形
  • 1 tablespoon oil
  • 2 cup finely diced pumpkin
  • 2 tablespoon pine nuts
  • 1 tablespoon grated ginger
  • 1 tablespoon finely chopped chilli
  • 2 clove garlic, crushed
  • 1/4 cup chopped coriander
  • 6 sheets filo pastry
  • 60 gram butter, melted (or cooking oil spray)

    Preheat oven to 180°C. Lightly grease a baking tray.

    Heat oil in a frying pan on medium. Saute pumpkin for 8 minutes, until tender. Add pine nuts, ginger, chilli and garlic. Cook, stirring, for 2 minutes. Mix in coriander.

    Working with 2 sheets of filo at a time, place on a flat surface. Brush with melted butter or spray with oil. Cut lengthways into 3 even-sized strips (width of strip will determine size of triangle).

    Place 1 heaped teaspoon of mixture onto end of each pastry strip.

    Fold pastry over to form a triangle. Continue folding, keeping triangle shape, until end of strip.

    Arrange on tray. Brush with butter. Repeat with remaining pastry and filling. Bake for 10-15 minutes, until golden and crisp. Serve.

Notes

An alternative is to cut filo widthways into 6 even-sized strips, making 18 smaller triangles. Makes 9 large triangles
