Ingredients
Gingerbread loaves with orange icing
- 100 gram butter, at room temperature
- 2/3 cup caster sugar
- 1/3 cup treacle
- 1 egg
- 1 1/2 cup plain flour
- 3 teaspoon ground ginger
- 1 1/2 teaspoon mixed spice
- 1/2 teaspoon bicarbonate of soda
- 1/3 cup milk
- zested orange rind, to garnish
Orange icing
- 1 1/2 cup icing-sugar mixture
- 2 tablespoon orange juice
- 20 gram butter, at room temperature
- 1 orange, finely grated rind
Method
Gingerbread loaves with orange icing

1Preheat oven to moderate, 180°C. Grease an 8-hole petite loaf pan.

2In a medium bowl, using an electric mixer, cream butter, sugar and treacle until light and fluffy. Beat in egg.

3Sift dry ingredients together and fold into creamed mixture alternately with milk. Spoon mixture evenly among pan holes.

4Bake for 20-25 minutes until cooked when tested. Cool in pan for 5 minutes before turning onto a wire rack to cool completely.

5Make Orange Icing as per method below.

6Spread icing over cold loaves. Top with orange rind strips.
Orange icing

7Sift icing sugar into a heatproof bowl. Stir in juice, butter and rind. Mix until smooth. Place over a pan of gently simmering water and heat, stirring, until mixture is of a spreadable consistency.
