Gnocchi with roast asparagus

Ingredients

Gnocchi with roast asparagus
  • 1 small red onion, thinly sliced
  • 1 tablespoon red wine vinegar
  • 2 bunch green asparagus, trimmed, cut into thirds
  • 2 tablespoon extra virgin olive oil
  • 500 gram fresh gnocchi
  • 2 tablespoon pine nuts, lightly toasted

Method

Gnocchi with roast asparagus

    Preheat oven to very hot, 220°C.

    In a small bowl, combine onion and vinegar and toss well. Stand for 20 minutes or until the onion is bright red.

    Toss the asparagus in oil and season to taste. Place in a single layer in a ovenproof dish. Bake for 10-12 minutes or until just tender.

    Cook gnocchi according to packet instructions and drain well. Mix with the asparagus in dish and bake for a further 2 minutes.

    Sprinkle with pine nuts. Serve on heated plates, accompanied with the onion and a sprinkle of shaved parmesan cheese.

Notes
