Ingredients
Gnocchi with roast asparagus
- 1 small red onion, thinly sliced
- 1 tablespoon red wine vinegar
- 2 bunch green asparagus, trimmed, cut into thirds
- 2 tablespoon extra virgin olive oil
- 500 gram fresh gnocchi
- 2 tablespoon pine nuts, lightly toasted
Method
Gnocchi with roast asparagus

1Preheat oven to very hot, 220°C.

2In a small bowl, combine onion and vinegar and toss well. Stand for 20 minutes or until the onion is bright red.

3Toss the asparagus in oil and season to taste. Place in a single layer in a ovenproof dish. Bake for 10-12 minutes or until just tender.

4Cook gnocchi according to packet instructions and drain well. Mix with the asparagus in dish and bake for a further 2 minutes.

5Sprinkle with pine nuts. Serve on heated plates, accompanied with the onion and a sprinkle of shaved parmesan cheese.
Notes
如果需要的话,可以加一点奶油或奶油蓝cheese during step 4, but this will increase kilojoule and fat content.
