Gnocchi with spinach and prosciutto
  • 625 gram packet gnocchi
  • 150 gram baby spinach
  • 100 gram prosciutto, cut into strips
  • 250 gram tub mascarpone
  • 1/3 cup (25g) grated parmesan

Method

    Cook gnocchi in a large saucepan of boiling, salted water according to packet directions. Drain well.

    Toss together gnocchi, spinach, prosciutto and mascarpone in an ovenproof dish. Season with pepper and top with parmesan. Place under a preheated grill for 4-5 minutes, about 5cm from heat source, until heated through and top is golden. Serve hot.
