Gougere
A traditionally French snack, gougere is a baked savoury cheese choux pastry. It is beautiful enjoyed fresh out of the oven with a cup of coffee for afternoon tea.

Ingredients
Gougere
- 125 gram unsalted butter, cut into cubes
- 1 teaspoon caster sugar
- 1/2 teaspoon salt
- 1 cup water
- 1 cup (150g) plain flour, sifted
- 5 eggs
- 150 gram gruyere or swiss-style cheese, grated
- 1 egg, lightly beaten, to glaze
Method

1Preheat oven to 200°C. Lightly grease two baking trays.

2Heat butter, sugar and salt with water in a saucepan on medium. Bring to boil. Remove from heat.

3Add flour and stir vigorously with a wooden spoon. Return to heat and continue stirring for 5 minutes, until mixture comes away from side of pan.

4Transfer to a bowl, cool slightly. Using an electric beater, add eggs one at a time, beating well after each addition. Beat on low for 3 minutes, until mixture is smooth and holds its shape. Stir in cheese.

5Spoon mixture into a pastry bag fitted with a plain 1.5cm nozzle. Pipe 36 rounds onto prepared trays, leaving space for spreading. Brush with beaten egg and bake for 20 minutes.

6Reduce heat to 190°C and bake for 10 minutes, until golden and crisp. Serve.
