Grilled barbecue chicken subs
  • 2 long bread rolls, split
  • 1/3 cup barbecue sauce, plus extra, to serve
  • 2/3 cup tasty cheese
  • 8 button mushrooms, thinly sliced
  • 1 teaspoon olive oil
  • 1 cup shredded barbecued chicken
  • 4 thin slices ham
  • baby rocket leaves, cherry tomatoes, to serve

Grilled barbecue chicken subs

    Preheat oven to hot, 200°C. Line an oven tray with baking paper.

    Arrange roll halves on trays, cut-side up. Spread with sauce and sprinkle evenly with half cheese.

    In a bowl, toss mushrooms with olive oil. Pile onto bases with chicken and ham.

    Sprinkle with remaining cheese and bake for 10-15 minutes, until golden and bubbling. Serve topped with baby rocket leaves (or chopped parsley) and accompany with cherry tomatoes (or salad of choice).

Notes

Try topping your pizza subs supreme-style with tomato paste, salami, ham, green capsicum, olives, pineapple and shredded cheese. Use Turkish bread, bread sticks or other bread of choice.
