Ingredients
Grilled plums with meringues and orange cream
- 12 medium (1kg) plums, halved, seeds removed
- 1/3 cup (80ml) water
- 1/4 cup (55g) raw sugar
- 400毫升浓奶油
- 1 tablespoon icing sugar mixture
- 2 teaspoon finely grated orange zest
- 1 tablespoon orange juice
- 80 gram meringues, crushed
Method
Grilled plums with meringues and orange cream

1Preheat grill.

2Place plums, cut-side up, on a shallow-sided oven tray; pour measured water into tray. Sprinkle the plums with sugar, then grill until browned lightly. Cool.

3Meanwhile, combine the cream, icing sugar, rind and juice in a medium bowl.

4To assemble, layer the crushed meringue, orange cream, plums and plum syrup on a serving platter or in individual glasses.
Notes
Adding water to the oven tray before grilling the plums acts as a base for the plum syrup - the colour from the plum skin combined with the excess sugar makes a syrup that can be drizzled over the plums.
