Ingredients
Grilled sponge with caramelised fruit
- 1 quantity sponge cake sandwich
- cooking oil spray
- 60 gram butter
- 1/3 cup (75g) brown sugar
- 1/4 cup (60ml) orange juice
- 1 teaspoon ground cinnamon
- 2 pears, cored and sliced
- 2 apples, cored and sliced
- 2 tablespoon amaretto (optional)
- mascarpone and toasted flaked almonds, to serve
Method
Grilled sponge with caramelised fruit

1Make caramelised fruit by melting butter in a frying pan on medium heat. Stir in sugar, juice and cinnamon. Bring to boil, stirring. Reduce heat and simmer for 2-3 minutes, until thickened slightly. Add fruit and saute‚ for 2-3 minutes, until tender and caramelised.

2Cut cake into quarters. Heat a frying pan on medium. Spray with oil. Add cake and cook for 30 seconds. Drizzle with Amaretto, if desired. Top with caramelised Fruit and serve with marscarpone and almonds.
