Ingredients

Grilled sponge with caramelised fruit
  • 1 quantity sponge cake sandwich
  • cooking oil spray
  • 60 gram butter
  • 1/3 cup (75g) brown sugar
  • 1/4 cup (60ml) orange juice
  • 1 teaspoon ground cinnamon
  • 2 pears, cored and sliced
  • 2 apples, cored and sliced
  • 2 tablespoon amaretto (optional)
  • mascarpone and toasted flaked almonds, to serve

Method

    Make caramelised fruit by melting butter in a frying pan on medium heat. Stir in sugar, juice and cinnamon. Bring to boil, stirring. Reduce heat and simmer for 2-3 minutes, until thickened slightly. Add fruit and saute‚ for 2-3 minutes, until tender and caramelised.

    Cut cake into quarters. Heat a frying pan on medium. Spray with oil. Add cake and cook for 30 seconds. Drizzle with Amaretto, if desired. Top with caramelised Fruit and serve with marscarpone and almonds.
