Ingredients
Haloumi and asparagus bites
- 340 gram (11 ounces) asparagus, trimmed
- 250 gram (8 ounces) haloumi cheese
Lemon dressing
- 1 tablespoon olive oil
- 2 teaspoon lemon rind, finely grated
- 1 tablespoon lemon juice
- 1/2 teaspoon white sugar
- 1 tablespoon baby capers, rinsed, drained chopped finely
Method
Haloumi and asparagus bites

1Make lemony dressing. Place ingredients in screw-top jar; shake well.

2Cut asparagus into bite-sized pieces. Boil, steam or microwave until just tender, rinse under cold water, drain.

3Cut cheese into bite-sized pieces. Thread one piece of asparagus, one piece of cheese, then another piece of asparagus close together onto each toothpick.

4Cook bites in large oiled frying pan over high heat about 30 seconds each side or until browned lightly.

5Serve bites immediately, drizzled with dressing.
