Ingredients

Haloumi and zucchini salad
  • 1 3/4 cup (270g) bottled semi-dried tomatoes in oil
  • 1 large yellow zucchini (150g),sliced thinly
  • 250 gram (8 ounces) haloumi cheese, sliced thinly
  • 90 gram (3 ounces) baby spinach leaves
  • 2 tablespoon lemon juice
  • 1 tablespoon coarsely chopped rosemary

Method

    Drain tomatoes; reserve 2 tablespoons of the oil.

    Cook zucchini and haloumi cheese on heated oiled grill plate (or grill or barbecue) until browned lightly.

    Divide spinach leaves, cheese, tomatoes and zucchini among serving plates. Whisk reserved oil, juice and rosemary in small bowl; serve dressing with salad.
