Ingredients

Ham and corn croquettes
  • 800 gram potatoes, peeled, chopped
  • 150 gram thinly sliced champagne ham, chopped
  • 125 gram can corn kernels, drained
  • 1 tablespoon chopped flat-leaf parsley
  • 1/4 cup plain flour
  • 1/3 cup freshly grated parmesan, plus extra, to serve
  • 1/2杯干杂粮面包屑
  • cooking oil spray
  • 410 gram can diced tomatoes with basil and garlic
  • 300 gram frozen baby green beans

Method

Ham and corn croquettes

    Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper. Steam or microwave potato until tender. Place in a large heatproof bowl; mash until smooth. While warm, add ham, corn, parsley, flour and parmesan; mix to combine. Season. Shape mixture into 8 equal-sized croquettes. Roll in breadcrumbs, then place on prepared tray. Spray with oil. Bake for 20 minutes or until golden.

    Meanwhile, place tomato and beans in a saucepan over moderate heat. Cook and stir for 5 minutes or until heated and slightly thickened.

    Serve beans with croquettes.

Notes

You can make croquettes a day ahead; keep, covered, in the fridge.
