Ham and corn croquettes
- 800 gram potatoes, peeled, chopped
- 150 gram thinly sliced champagne ham, chopped
- 125 gram can corn kernels, drained
- 1 tablespoon chopped flat-leaf parsley
- 1/4 cup plain flour
- 1/3 cup freshly grated parmesan, plus extra, to serve
- 1/2杯干杂粮面包屑
- cooking oil spray
- 410 gram can diced tomatoes with basil and garlic
- 300 gram frozen baby green beans
Method
Ham and corn croquettes

1Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper. Steam or microwave potato until tender. Place in a large heatproof bowl; mash until smooth. While warm, add ham, corn, parsley, flour and parmesan; mix to combine. Season. Shape mixture into 8 equal-sized croquettes. Roll in breadcrumbs, then place on prepared tray. Spray with oil. Bake for 20 minutes or until golden.

2Meanwhile, place tomato and beans in a saucepan over moderate heat. Cook and stir for 5 minutes or until heated and slightly thickened.

3Serve beans with croquettes.
Notes
You can make croquettes a day ahead; keep, covered, in the fridge.
