Ingredients
Hoisin pork
- 1/2 cup (125ml) hoisin sauce
- 1/2 cup (125ml) chicken stock
- 1 clove garlic, crushed
- 1 teaspoon chilli, chopped
- 1 teaspoon grated ginger
- 500 gram pork fillet, trimmed, sliced
- 1 tablespoon olive oil
- 1 red onion, sliced
- 1 bunch bok choy, quartered
- 1 bunch broccolini, chopped
- 1 tablespoon coriander, plus extra, to serve
- steamed rice or noodles, to serve
Method
Hoisin pork

1Combine hoisin sauce, stock, garlic, chilli and ginger in a small jug.

2Arrange pork in a shallow dish; cover with marinade, turning to coat well. Cover with plastic wrap; keep in fridge at least 20 minutes to marinate, basting occasionally.

3Heat oil in a wok or frying pan on high. Stir-fry pork, in batches, 2-3 minutes each batch, until brown, reserving marinade. Remove from wok and set aside.

4Add onion to same wok; stir-fry 1 minute. Return pork to wok with bok choy, broccolini, coriander and marinade; stir-fry 2 minutes.

5Serve with steamed rice or noodles and sprinkle with extra coriander.
