Ingredients

Hoisin pork
  • 1/2 cup (125ml) hoisin sauce
  • 1/2 cup (125ml) chicken stock
  • 1 clove garlic, crushed
  • 1 teaspoon chilli, chopped
  • 1 teaspoon grated ginger
  • 500 gram pork fillet, trimmed, sliced
  • 1 tablespoon olive oil
  • 1 red onion, sliced
  • 1 bunch bok choy, quartered
  • 1 bunch broccolini, chopped
  • 1 tablespoon coriander, plus extra, to serve
  • steamed rice or noodles, to serve

Method

    Combine hoisin sauce, stock, garlic, chilli and ginger in a small jug.

    Arrange pork in a shallow dish; cover with marinade, turning to coat well. Cover with plastic wrap; keep in fridge at least 20 minutes to marinate, basting occasionally.

    Heat oil in a wok or frying pan on high. Stir-fry pork, in batches, 2-3 minutes each batch, until brown, reserving marinade. Remove from wok and set aside.

    Add onion to same wok; stir-fry 1 minute. Return pork to wok with bok choy, broccolini, coriander and marinade; stir-fry 2 minutes.

    Serve with steamed rice or noodles and sprinkle with extra coriander.
