Honey and mint lamb skewers with tzatziki

Ingredients
Honey and mint lamb skewers with tzatziki
- 1/5 cup mint leaves, sliced, plus extra, to serve
- 4 clove garlic, chopped
- 1 teaspoon black peppercorns
- 1/2 teaspoon dried chilli flakes
- 2 tablespoon honey, plus extra to drizzle
- 1 tablespoon olive oil
- 1 tablespoon wholegrain mustard
- 500 gram lamb backstrap, cubed
- 16 short bamboo skewers, soaked
- lemon wedges, to serve
Tzatziki
- 2 cup greek yoghurt
- 1 lebanese cucumber, seeded, finely diced
- 1 lemon, juiced
- 1 tablespoon olive oil
- 1 clove garlic, crushed
Method
Honey and mint lamb skewers with tzatziki

1In a mortar and pestle, combine mint, garlic, peppercorns and chilli. Pound to a thick paste. Stir in honey, oil and mustard.

2Thread 4 cubes of lamb onto each skewer. Place skewers on lined tray and coat with marinade. Cover and chill 30 minutes.

3To make tzatziki, combine all ingredients and season to taste. Cover and chill until required.

4Heat a large frying pan or barbecue plate on high. Cook skewers 8-10 minutes, turning on all sides, until cooked to your liking. Sprinkle tzatziki with extra mint. Serve skewers with tzatziki and lemon wedges.
