Honey-baked pears with ricotta

Ingredients
Honey-baked pears with ricotta
- 4 firm pears, halved, stems intact
- 200 gram low-fat fresh ricotta
- 1/2 cup untoasted muesli
- 2 tablespoon honey
- low-fat vanilla yoghurt, to serve
Method
Honey-baked pears with ricotta

1Preheat oven to moderate, 180°C. Line a baking tray with baking paper.

2Use a teaspoon to scoop out the centre core and seeds of each pear to make a hollow. Place pear halves on prepared tray.

3Spoon ricotta into the hollows in pear halves. Sprinkle with muesli and drizzle with honey.

4Bake 20-25 minutes, or until pears are tender and muesli is golden and crisp. Divide pears among serving plates. Drizzle with pan juices. Serve with a dollop of yoghurt.
Notes
Maple or golden syrup can be used instead of honey.
