Honey chicken stir-fry

Ingredients
- 2 x 76 grams packets chicken-flavoured 2-minute noodles
- 1 tablespoon vegetable or peanut oil
- 400 gram chicken breast fillets, thinly sliced
- 500 gram frozen mixed vegetables
- 1/3 cup soy sauce
- 2 tablespoon honey
Method

1Place noodles in a heatproof bowl. Add flavour sachets from noodle packet. Cover with boiling water and stand for 2 minutes or until noodles are soft. Stir to separate noodles. Drain.

2Heat a wok or large frying pan over high heat. Add oil; swirl to coat surface. Stir-fry chicken in batches until browned and cooked. Add vegetables; stir-fry until tender.

3Return chicken to wok. Add noodles and combined soy sauce and honey; stir-fry until heated. Serve.
Notes
Stir-fry is best made just before serving. For a spicier stir-fry, replace honey with sweet chilli sauce. We used frozen mixed vegetables including carrot, cauliflower and broccoli. Instead of frozen vegies, buy a fresh stir-fry vegetable mix from the salad and lettuce section. Use beef instead of chicken.
