Ingredients
Honey soy chicken salad
- 1 barbecued chicken
- 2 cup bean sprouts
- 1 carrot, roughly grated
- 1/2 cup coriander leaves
- 1/2 cup shredded mint
- 200 gram packet fried noodles
- 1/2 iceberg lettuce, finely shredded
- 1 1/2 tablespoon sesame seeds, toasted
Dressing
- 1/4 cup (60ml) soy sauce
- 2 tablespoon honey
- 3 teaspoon sesame oil
Method
Honey soy chicken salad

1Remove meat from chicken, discarding skin and bones. Shred meat and place in a large bowl with bean sprouts, carrot and herbs. Toss to combine.

2In a separate bowl, combine ingredients for the dressing. Drizzle over salad, tossing well. Chill for 20 minutes.

3When ready to serve, add noodles and lettuce to chicken mixture. Toss well and sprinkle with sesame seeds.
Notes
This also makes a great filling in pita bread or rolled up inside a wrap.
