Ingredients

Italian-style tomatoes on toast
  • 2 loaves of ciabatta, split in half lengthways
  • olive oil, for brushing
  • 2 clove garlic, peeled
  • 6 ripe tomatoes, thickly sliced
  • 2 fresh mozzarella balls
  • 1 bunch basil
  • balsamic vinegar, to serve
  • good-quality olive oil, to serve

Method

Italian-style tomatoes on toast
  • 1
    Brush the cut sides of ciabatta with olive oil and grill or barbecue until golden and crispy. Rub the toasted sides with the whole garlic cloves.

    Either set up the ingredients on platters for guests to help themselves, or cut the ciabatta into thirds and top each piece with thick slices of tomato, torn mozzarella and a few torn basil leaves. Drizzle with a little balsamic and olive oil, season and enjoy.
