Judy's chocolate brownies
- 150 gram butter
- 220 gram good-quality dark chocolate
- 1 1/4 cup (275g) caster sugar
- 1 1/2 teaspoon teaspoons vanilla extract
- 3 eggs, beaten lightly
- 1 cup (150g) plain flour, sifted
- 90 gram macadamia or pecans
- icing sugar, to serve
Method
Judy's chocolate brownies

1Preheat oven to 180°C (160°C fan-forced). Grease a 25cm square cake pan.

2Melt butter and chocolate in a heatproof bowl over a saucepan of simmering water. Remove from heat, then stir in sugar, vanilla, eggs, flour and nuts until just combined.

3Pour mixture into prepared pan; bake for 25-30 minutes or until set. Do not overcook; the top should be soft to touch and brownies will firm as they cool, but they should be moist and fudge-like.

4Cool in pan. Served dusted with icing sugar.
Notes
Butter and chocolate suitable to microwave.
