Ingredients
Kofta couscous
- 1/2 cup instant couscous
- 1 teaspoon butter
- salt flakes
- cracked black pepper
- 2/3 cup boiling water
- 3 cooked lamb koftas, broken into small pieces
- 1 1/2 tablespoon shelled pistachio kernels, chopped
- handful fresh mint leaves, chopped
- 1 green onion (sallot), sliced
- 1 teaspoon finely chopped long red chilli (optional)
- tzatziki, to serve
Method
Kofta couscous

1Boil kettle. Place couscous in bowl with butler, salt and pepper. Pour over boiling water, cover with cling wrap and set aside for 3 minutes until liquid has been absorbed

2Remove cling wrap and fluff couscous with fork. Add kofta pieces, pistachios, mint, green onion and optional chilli. Toss together.

3Place in container and serve hot or cold with tzatziki.
