Lasagne bolognese

Ingredients
- 2 teaspoon olive oil
- 6 slice pancetta (90g), finely chopped
- 1 large white onion (200g), finely chopped
- 1 medium carrot (120g), finely chopped
- 2 celery stalks (200g), trimmed, finely chopped
- 1 kilogram beef mince
- 150 gram chicken livers, trimmed, finely chopped
- 2 cup (500ml) milk
- 60 gram butter
- 2 cup (500ml) beef stock
- 1 cup (250ml) dry red wine
- 410 gram can tomato puree
- 2 tablespoon tomato paste
- 1/4 cup finely chopped fresh continental parsley
- 6 sheets (300g) fresh lasagne
- 2 cup (160g) finely grated parmesan
White sauce
- 125 gram butter
- 3/4 cup (110g) plain flour
- 1.25 litre (5 cups) hot milk
Method

1Heat oil in large heavy-based pan. Cook pancetta, stirring, until crisp. Add onion, carrot and celery and cook, stirring, until vegetables soften. Add beef and liver. Cook, stirring, until beef just changes colour. Stir in milk and butter. Cook, stirring occasionally, until liquid reduces to about half. Add stock, wine, tomato puree and tomato paste. Simmer, uncovered, for 1 1/2 hours. Remove from heat and stir in parsley.

2Preheat oven to 200°C/180°C fan forced. Grease a deep 26cm x 35cm baking dish with oil.

3To make the white sauce, melt butter in a medium saucepan over medium heat. Add flour, stirring, until mixture forms a smooth paste. Stir in milk gradually. Bring to the boil, stirring, until sauce boils and thickens.

5Bake, uncovered, for 40 minutes or until top is slightly browned. Stand for 15 minutes before cutting.
