Lemon fruit & nut slice
This classic, simple slice combines all the great baking flavours – lemon, fruits, nuts and vanilla. The icing should be just runny enough to leave adorable little droplets around the edges.

Ingredients
- 130 gram butter
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla essence
- 1 cup dried fruit – sultanas, raisins, cranberries, etc
- 1/2 cup chopped nuts – pistachios, pecans, almonds, etc, plus extra for the topping
- 2 cup self-raising flour
- 1/4 cup milk
- 1 1/4 cup icing sugar
- 1 lemon, juice and zest

1Preheat the oven to 175°C. Line a 20cm x 30cm slice tin.

2Using an electric beater, cream the butter and sugar until pale – about 5 minutes. Add the eggs, one at a time, beating well between each. Stir in the vanilla, fruit and nuts, then fold together with the sifted flour and milk.

3Spread the mixture in the tin and smooth the top. Bake for 25-30 minutes or until golden. Allow to cool completely.

4For the icing, mix the icing sugar with enough lemon juice to create a thin, drizzly consistency. Spoon the icing over the slice, then sprinkle with extra nuts and lemon zest.
